Why does the same batch of wine taste different?

I don’t know if this has happened to you. I bought a bottle of wine online. The batch is the same as the pack, but the flavor is different. After careful identification and comparison, I found that this is still true. Is this normal? How should we treat it?

In fact, this phenomenon of wine circulation management is called “bottle difference”, that is, different bottles of the same bottle of wine will have different aromas and tastes. The reasons for this phenomenon are mainly reflected in these three aspects.

1. Shipping conditions

The same batch of wine is shipped all over the world after leaving the factory. Depending on the route and destination, some of the wine is on the plane, some on the cruise ship, and some distributed to the truck. Different transportation methods, transportation times, environments and experiences during transportation will lead to different degrees of internal reactions in wine.

For example, during transportation, the upper layer of wine is more bumpy than the lower layer of wine, which makes the upper layer of wine oxidize faster than the lower layer of wine, so the taste will be different. Also, wines exposed to sunlight during transport oxidize more quickly, which is not the same as the bottom or dark side of wine.

In addition, the bumps generated during transportation can also easily make wine “dizzy”, which is a temporary phenomenon and is generally not considered wine. Wine bottle dizziness refers to the continuous bumping and vibration of wine in a short period of time (usually within a week), which affects the aroma and taste, forming a state of “motion sickness”.

The most typical manifestations of wine bottle vertigo are soft and dull aroma, prominent acidity, and unbalanced structure, which affects the flavor and taste of wine.

2. Storage environment

Wine should be stored at constant temperature and humidity, and the environment should be clean and tidy. Many winemakers cannot achieve such an ideal storage environment and tend to store it in the grocery store. Therefore, the smell of other stores will adhere to the wine box and bottle, which is different from professionally stored wine.

In addition, the temperature difference in the wine cellar will have different effects. High temperature will accelerate the aging of wine quality, and low temperature will precipitate aromatic esters. Therefore, the same batch of wine may result in bottle differences between North and South.

3. Physiological state

This mainly refers to the physiological state during the tasting process. A person’s overall physiological state while drinking can affect how alcohol feels. If the taster is in poor health, the production of saliva in the mouth decreases. The saliva produced in the mouth plays a very important role in buffering the taste of wine and food.

The same batch of wine is transferred to different destinations from transport to sale, from producer to consumer. Due to different storage environments, transportation conditions or physiological states during drinking, the aroma and taste of each bottle of wine may vary.

So when we drink wine, we find that its performance is a little out of whack. Please don’t easily deny its quality. Generally speaking, bottle drop phenomenon is a small problem that will not affect the wine too much, so you don’t need to pay too much attention to this phenomenon. The most important thing is to have good taste.
